So I run an ecom store, haven't paid much attention to it really.

It seems however to have some problems when I check the rankings. The category pages don't rank for their target keywords, rather a product page does.

How would I re-structure the website for google to recognize the category pages better? It's an EMD for the main category (i.e "beds.com"), but the homepage obviously ranks like #50+ for that keyword.
 
I've run into this same thing, you can add more content to the category page. Through a combination of content freshness and relevance it could help swap which page has priority. Check your page titles too, the product page could potentially be a better match.

Or lean into it and enhance that product page to encourage additional browsing by showing similar products and categories in a "you may also like" or related categories section.
